Tomato Sandwich Salad (aka - Cracker Salad)

- 3 - 4 medium tomatoes, de-seeded and chopped (the meatier the tomato, the better)
- 1 small, sweet onion - finely chopped
- dash of salt
- generous dash of black pepper
- mayonnaise to taste
- crackers of choice (I love to use oyster crackers or mini saltines)
De-seed and chop your tomatoes and place in a medium bowl. Add your finely chopped onion, salt, pepper, and enough mayonnaise to coat everything well. The mixture should be creamy.
If you are eating right away, you can add your crackers now and serve immediately. If you are waiting to serve it, then leave the crackers out until right before serving. You can also serve it with the crackers on the side and your guests can add them as they like. Enjoy!
NOTE: You can use any cracker you like, or even pretzels or Cheez-it crackers. You can also add other things like bacon, cucumber, cheese cubes, peppers, etc. The options are endless!
This recipe makes 4 - 5 servings and can be adjusted to larger or smaller crowds.
