Mamaw's Persimmon Pudding

Here’s everything you need:
 
  • 2 cups persimmon pulp
  • ¾ tsp. baking soda
  • 2 cups sugar
  • 2 tsp. baking powder
  • 2 cups milk
  • ½ tsp. salt
  • 1½ cups all-purpose flour
  • 1 tsp. vanilla extract
  • 1 stick butter, melted
  • 2 tsp. cinnamon
  • 2 eggs, beaten
Preheat your oven to 325F. Butter a 9x13 baking pan.
 
In a large mixing bowl, combine persimmon pulp, baking soda, sugar and eggs. Mix well.
 
Add flour, baking powder, cinnamon, vanilla, salt, milk, and melted butter. Stir to combine well.
 
Pour into prepared baking dish and bake for 55-60 minutes.
 
The pudding will rise in the oven but will fall when you remove it, and it cools. Serve warm or allow to cool, but don't leave out the dollop of whipped cream! Enjoy!
