Here's what you need:
- 1 fresh pineapple sliced into rounds
- about 2 Tbsp butter
- about 2 Tbsp brown sugar
- Barrata Cheese, sliced (can also use fresh sliced mozzarella, if you can't find Barrata)
- Priester's Pecans Praline Morsels, or other praline morsels
- Priester’s Pecans Roasted Pecans
- Honey for drizzling on top
- fresh mint for garnish (optional)
Heat a grill pan, iron skillet, or other skillet over medium heat.
Lightly butter both sides of the pineapple slice and add a sprinkling of brown sugar to one side.
When the skillet is hot, place your pineapple in the pan (brown sugar side down) and sprinkle with additional brown sugar on the other side. Sauté for 3 - 4 minutes or until the pineapple is your desired level of grilled. Turn over and sauté on the other side an additional 3 - 4 minutes.
Remove from pan and top with the Barrata cheese, praline morsels, and pecans. Drizzle with honey, garnish with fresh mint (if using), and serve warm. Enjoy!
NOTE: So many different fruits can be used. The process to make it would be the same.
