Dirty Mashed Potatoes AND Creamy Chicken with Roasted Red Peppers

Here's what you need:

For the Dirty Mashed Potatoes:

  • 1 quart or 3-4 medium potatoes, cooked with skins on
  • 1/3 stick of butter, plus a pat for the top
  • B.T.Leigh's Sauces and Rubs - Somethin’ For Everything seasoning (or salt, pepper, garlic powder, and onion powder) to taste
  • 1/2 cup milk (coconut, regular milk, or any milk you like) or enough to make them as creamy as you like
  • 2 Tbsp. dry Carnation Coffee Creamer (plain)
  • 1/3 block of cream cheese

Put your 1/3 stick butter in with the cooked potatoes and use a masher to mash them up. Season to taste and add your milk. Heat over medium/low until steamy and then add your cream cheese. Cook over low heat until the cheese is fully melted and stir to incorporate well. Top with a pat of butter and serve hot. Enjoy!

For the Creamy Chicken with Roasted Red Peppers:

  • 2 lbs. of chicken (I used boneless, skinless thighs)
  • 1 small can cream of chicken soup
  • 1 small can cream of mushroom soup
  • use one of the empty soup cans to add a can of milk (I used coconut, but you can use any milk)
  • 8 oz. of roasted red peppers
  • salt & pepper to taste

Put your chicken in the bottom of your crockpot and season with salt and pepper.

In a medium bowl, add both soups, one can of milk, and the roasted red peppers. Mix well to combine.

Pour this over the chicken and give it a little mix to get it under the chicken.

Cook on high for 5 - 6 hours or low for 7 - 8 hours or until chicken is fully cooked and tender enough to shred.

Using two forks or shears, cut up the chicken to your desired size. Serve over mashed potatoes with veggies on the side. Enjoy!
