
Cottage Cheese Salad

5 oz. miniature marshmallows
1/4 cup whole milk
4 oz. Cream cheese (softened or use the “whipped” option)
8 oz. Cottage cheese
10 oz. pineapple (crushed or tidbits), slightly drained
1/2 of an 8 oz. container of cool whip
Add your marshmallows and 1/4 cup of milk to a double boiler or a glass bowl over a pan of steaming water. Stir until the marshmallows are completely dissolved and smooth.
Remove from the heat and add the cream cheese. Stirring until it’s melted and creamy/smooth.
Allow to cool and then fold in the cottage cheese, pineapple, and cool whip. Chill until ready to serve. Enjoy!
NOTE: We added some Priester's Pecans Praline Morsels to the top for garnish and crunch. :)
