
Classic Coca-Cola Cake

For the cake:
- 1 cup Coca-Cola
- ½ cup buttermilk
- 1 cup (2 sticks) salted butter, softened
- 1¾ cups granulated sugar
- 2 large eggs
- 2 tsp. vanilla extract
- 2 cups all-purpose flour
- ¼ cup unsweetened cocoa powder
- 1 tsp. baking soda
- 1½ cups mini marshmallows
Preheat oven to 350F and spray a 9x13-inch baking dish with baking spray. Combine Coca-Cola and buttermilk in a glass measuring cup. Set aside. Using an electric mixer (either stand or hand-held) beat butter until creamy. Gradually beat in sugar. Add eggs and vanilla and beat on low speed until blended. In a separate bowl, combine flour, cocoa, and baking soda. Add flour mixture to butter mixture in 3 additions, alternating with buttermilk mixture in 2 additions. Beat just until blended. Stir in marshmallows. Pour batter into prepared baking dish. Bake for 33 - 38 minutes or until a tester inserted into the center comes out clean or with just a few moist crumbs. Let cool 30 minutes before adding Coca-Cola icing.
For the icing:
- 1/2 cup (1 stick) salted butter
- 1/3 cup coca-cola
- 1 lb. (or approx. 4 cups) powdered sugar
- 2 tsp. vanilla extract
- 3 Tbsp. unsweetened cocoa powder
Combine butter, Coke, and cocoa in large saucepan and place over medium heat, stirring frequently until butter is melted completely and mixture thickens slightly. Do not let it boil. Remove from heat. Whisk in confectioners' sugar and vanilla. Icing will be on the thinner side. Pour on top of cooled Coca-Cola cake. Enjoy!
