Carrot Salad

Here's what you need: 
  • 1 lb carrots, peeled and shredded
  • 1/4 cup mayo
  • 1/4 cup Greek yogurt
  • 1 cup pineapple tidbits, drained
  • 1/2 cup craisins
  • 1 - 2 Tbsp maple syrup 
Add all ingredients to a bowl and give it a good mix. Refrigerate until cold. Enjoy!
 
NOTE: You can use 1/2 cup mayo and omit the Greek yogurt if you wish. You can also use 2 Tbsp. granulated sugar in place of the maple syrup, but the maple syrup is yummy!
