Easy Chocolate Chip Cake

Here's what you need:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup butter
  • 1/2 tsp. baking powder
  • 1 egg, beaten
  • 1 cup plain greek yogurt (or buttermilk)
  • 1 tsp. baking soda
  • 1 tsp. vanilla extract
  • 1 cup semi-sweet chocolate chips

Preheat your oven to 350F. Lightly grease either an 8x8 or 9x9 square pan. 

Blend together flour, sugar, and butter using a pastry knife or two forks until coarse crumbles form. Remove 2/3 cup and set aside for the topping.

Sprinkle the baking powder over the flour mixture and then add the beaten egg. Mix to combine and set aside. 

In a small bowl, mix the baking soda and vanilla into the yogurt until it's dissolved and starts to get foamy. Add the yogurt mixture to the flour mixture and mix/stir only until the liquid is completely absorbed. Don't overmix. The batter will be fluffy. Fold in chocolate chips. Pour into your prepared pan and sprinkle the topping over the top of the batter. You can sprinkle a few extra chips on top if you like. 

Bake for 35 - 50 minutes depending on the size pan you used. the 8-inch pan will take a bit longer. Allow to cool for 15 minutes, or so, before serving. Enjoy with icing, a drizzle of chocolate syrup or just as is, but don't forget the ice cream!
