Baked Maple Rice Pudding

Here's what you need:

  • 2 1/2 cups of cooked rice, unseasoned
  • 2 1/2 cups of whole milk (can use 2%, but skim is not recommended)
  • 3 large eggs, beaten well
  • 1 cup pure maple syrup
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/2 tsp. salt
  • 3/4 tsp. vanilla or vanilla bean paste

Preheat oven to 350F. Lightly butter and bottom and sides of a 2-quart baking dish. Add your cooked rice to a large mixing bowl. Add milk and mix to combine. Add your beaten eggs and vanilla and mix. Add maple syrup and mix well. Add spices and salt and mix well. 

Pour into your prepared pan and bake in your preheated oven for 55-60 minutes or until the center is set/firm. Enjoy warm with a dollop of fresh whipped cream!
