Amish Macaroni Salad

Here's what you need:
  • 1 1/2 cups macaroni noodle of choice
  • 3 - 4 hard-boiled eggs, chopped
  • 1/2 cup celery, finely chopped
  • 1/4 cup onion, diced (optional)
  • 3/4 cup mayo
  • 2 Tbsp. yellow mustard
  • 1/4 cup white vinegar
  • 1/3 cup sugar
  • fresh cracked pepper to taste (optional)
  • about 4 oz. fresh shredded sharp cheddar cheese
Cook your noodles al dente, drain and rinse under cold water.
 
Add eggs, celery, and onion to your noodles. Toss to combine.
 
In a separate small bowl, mix mayo, mustard, vinegar, sugar, and pepper thoroughly, then add to macaroni mixture and mix to combine.
 
Add shredded cheese and toss. Best served chilled and even better if made the night before! Enjoy!
 
NOTE: if you make this the night before, you may need to make a bit more of the dressing before serving as the noodles will absorb it as it sits.
