Baked Feta Pasta

 
Here's what you need:
 
24 oz. pack of cherry tomatoes
1/2  cup Extra Virgin Olive Oil
1/4-1/2 tsp salt
1/4-1/2 tsp black pepper
8 oz block of Feta Cheese
10 oz of cooked pasta of your choice
2 garlic cloves minced or about 1 TBSP minced garlic from a jar
1/4 cup fresh or slightly dried basil leaves
 
Put the cherry tomatoes in a 9x9 (or larger) baking dish. Add the olive oil, salt and pepper. Mix to coat the tomatoes. Place the block of feta cheese in the center. Bake in a 400 degree oven for 30-35 minutes until the feta is browned and softened and the tomatoes have burst.
 
While the tomatoes and feta are baking, prepare your pasta according to the package (cook al dente).
 
As soon as the dish comes out of the oven, stir in the pasta (reserving about 1/3 cup of the pasta water), garlic, basil and red pepper flakes. Toss until evenly coated. If the sauce is too thick, add a little pasta water a tablespoon at a time. Enjoy!
